Harvesting is carried out using a purpose built straddle machine, the key feature of which is the rotary olive picking heads designed in and imported from California.
The newly harvested olives are then transported immediately to the Wooloomooloo olive press where they are washed, crushed and the oil extracted from the olive paste.
