Olive Varieties

The varieties were chosen based upon the European experience where varietal understanding was highly developed, researched and documented. There was much to learn from the experienced oil makers and blenders from Europe.

Each variety was individually selected for its own uniqueness and complimentary flavours.

Arbequina

Chosen as it complements our range of more medium and robust oils very well.

Frantoio

This variety was selected by Ian and Tanya Oatley after they tasted freshly pressed Frantoio oil in Italy and were impressed by the quality and unique flavour of the variety.

Leccino

Another legendary Tuscan variety, Leccino was also selected by Ian and Tanya Oatley as the perfect complement to our Frantoio Oil.

Koroneiki

We required a Robust Oil in our range and this variety definitely captures these strong vigorous elements.

Picual

Selected as it makes an outstanding quality oil, with balanced flavours.
