Sinolea Extraction System

The Wooloomooloo press utilizes the unique Sinolea extraction system, which extracts a first portion or ‘free run’ oil without the use of heat or pressure or the addition of water and results in oil of exceptional quality. As the Sinolea system does not extract all the oil, the paste is then passed through a centrifugal decanter, which separates the remaining olive oil from the paste. All the oil produced is extra virgin.

The pristine olive oil is then stored in perfect conditions of correct temperature, no light and no oxygen; any remaining solids gradually settle out and are removed, and the oil is ready to be bottled.

This unique gravitational method captures the delicate flavour and aromas as well as retaining the oils freshness and vitality.
